What Is Schiacciata? The Italian Bread Behind Our Sandwiches

If our sandwiches taste different, it starts with the bread. Schiacciata (skee-ah-CHA-ta) is the Tuscan flatbread that makes a pressed sandwich sing.

What it is

Schiacciata means "squashed" or "pressed" in Italian, a flatbread stretched thin, dimpled, brushed with olive oil, and baked until the outside crackles and the inside stays tender. It's the traditional bread for Tuscan street sandwiches.

Schiacciata vs. focaccia

They're cousins. Focaccia is thicker, fluffier, and more bread-forward. Schiacciata is thinner and crispier, which is exactly what you want in a sandwich, it presses flat, holds up to fillings, and shatters a little when you bite it.
